Would the rad be partially blocked hindering flow, you mightn't of noticed it in the colder weather.
Is there antifreeze/coolant in the rad.
Im no expert so i could be way off but just a thought.

Any splits anywhere along the tubes or anything? Any sign of a leak?

Check the waterpump, the vanes could have seperated from the pump itself

Sounds ok to me then, the electric fan cuts in at about 92deg so you should see the needle move up near the red before it cuts in on a very hot day . Most cars here run a 88deg state but I always fit 82deg in my 1275s. If its hard driving pushing the temp up you could fit an oil cooler.

stick in an 82 degree stat but before you do just drill 4 holes around the mounting plate of about 2-3mm to let some water flow through before the stat opens
